The Museu do Azeite (Olive Oil Musem) shows the historic and modern methods of producing olive oil. At this former olive press you can find out all about how olive oil was traditionally made. The Lagar de Varas do Fojo studies the evolution from the Roman system of oil manufacture and through to a period active of intense production over a hundred years (1841-1941). Oil is produced without resource to machines, keeping everything as traditional as possible. A lagar was a community endeavour. Any person who had olives could bring them to be processed and would receive in return a share of the oil produced.
