Close to the Cathedral is the rebuilt Lagar de Vares (Oil Press), which demonstrates how techniques have changed to improve the refinement of a traditional product. In the first room you can see two great press bars and the boiler and, in the next room, the olive oil storage tank and the milling stone. In the yard is the well that fed the boiler and a new structure, built to house one of the most important Roman epigraphic collections in the Iberian Peninsula.
